This low-fat leftover turkey sandwich is pretty much why you go to so much work to make Thanksgiving, Christmas or Easter dinner. Using half the fat mayo makes it even lighter.
4 slices of multigrain bread
2 1-oz slices of part-skim provolone cheese
1/2 cup ripe avocado slices
2 Tbsp. mayonnaise
1 cup alfalfa sprouts
2 6-oz slices skinless leftover turkey (white meat)
Toast bread slices. Cut leftover turkey into pieces and toss with mayo. On one slice of bread, layer cheese, sliced avocado, turkey mix, alfalfa sprouts and top with second slice of bread. Tip: serving with raw veggies or a side salad makes this a great sandwich to share with a friend.
Makes 2 portions.
