We’re not even going to presume to give you a different Christmas or Thanksgiving turkey recipe than the one your family normally uses, but we will suspect that come Boxing Day, you’ll have a ton of turkey waiting to be ‘remade’ into family-friendly dishes.  (Aren’t you glad we didn’t say leftovers?)  This is a great recipe, and you can substitute tofu or chicken for those who want to avoid the tryptophan-induced sleepiness that comes on after eating turkey.  Here’s our take on Acadian Turkey a la King.

Turkey á la King Recipe

Ingredients:
2 tablespoons butter
3 fresh mushrooms, sliced
1 tablespoon all-purpose flour
1 cup chicken or turkey stock
1/2 cup heavy cream
1 cup chopped cooked turkey
1/3 cup frozen peas, thawed
1 t. summer savoury
1 t. ground fennel
salt and pepper to taste
(curry, cumin, green grapes and sherry optional – see below)

Turkey á la King Directions

In a large pot over medium low heat, cook butter until golden brown. Saute mushrooms until tender. Stir in flour until smooth. Slowly whisk in chicken broth, and cook until slightly thickened. Stir in cream, turkey and peas. Reduce heat to low, and cook until thickened. Season with salt and pepper.  Serve over rice, noodles or in puff pastry cups. Variations include adding curry/cumin for an eastern twist, or serving cold as a sandwich filling and add green grapes sliced in half.  Another good idea?  Add sherry. (That was my Mom’s secret weapon!)
