Sometimes on those hot spring and summer mornings, the kids need a chilled treat. This frozen yogurt breakfast bark is not only filled with fruit and protein but the granola gives it some sweet crunch.
Ingredients:
3 c. yogurt
1/2 c. blueberries
1/2 c. chopped strawberries
1/2 c. granola
mint leaves for garnish
Method:
Evaluate your freezer space! If a sheet pan won’t fit, use 2 8×8 cake pans instead. Onto a sheet pan lined with parchment paper, spread the yogurt in a layer about 1/2 inch thick. Get your kids to sprinkle the other ingredients on top. Patterns and fun designs preferred! Place your pan(s) in the freezer. Let chill overnight and crack it up as you would chocolate bark. Refreeze the pieces in a plastic bag until you are ready to eat.
